Radicchio & Manchego Quesadillas

Serves 6

Ingredients

½ cup Italissima Arborio Rice
½ oz. Mediterranean Gourmet Dried Porcini Mushrooms
¾ lb. Fresh Button Mushrooms, Brushed and sliced
1 Yellow Onion, Chopped fine
1 Celery stalk, Chopped fine
½ cup Dry White Wine

3 cups Chicken Stock
½ cup Heavy Cream
2 tbsp. Unsalted Butter
1 tbsp. Fresh flat leaf parsley, Chopped
3 cups Boiling Water
½ tsp. Salt, Plus Salt to taste
Freshly ground pepper

Instructions

1. Rinse the rice in several changes of water and drain. Place rice in a saucepan and add two cups of the boiling water and ½ tsp. of salt. Bring to a boil over high heat. Quickly reduce heat to low and cover. Cook until tender and all water is absorbed, about 40 minutes. Remove from heat and let cool.

2. Place dried mushrooms in a bowl and add one cup of boiling water. Let stand for 30 minutes until mushroom have softened. Drain, saving the liquid. Set the mushrooms aside. Strain the liquid from the mushrooms through a cheese cloth and set aside.

3. Over medium heat, melt butter in a soup pot. Add onion and celery and sauté until soft. Increase the heat to medium. Add the fresh button mushrooms and rehydrated mushrooms, stirring occasionally, for about 15 minutes. Raise the heat to high, add the stock and the reserved mushroom liquid. Bring to a boil. Reduce heat and cook uncovered for another 20 minutes. Add the rice and the cream and let simmer for five minutes so the flavours can marry. Season with salt and pepper.

4. Serve in soup bowls, garnish with parsley and serve.
