Fresh Tomato Soup

Serves 4

Ingredients

1 tbsp. Italissima Extra Virgin Olive Oil
1 lb. Italissima Italian Peeled Tomatoes
55 g Preferisco Orzo or other Soup Pasta
2 cups Chicken Stock
1 Onion, Cut in quarters

1 Garlic Clove, Thinly sliced
1 Celery Stalk, Chopped
Salt & Pepper
Fresh Flat-leaf Parsley

Instructions

1. Drizzle olive oil into a large, heavy-bottom pan. Add the tomatoes, onion, garlic, and celery. Cover and cook over low heat for 45 minutes, occasionally shaking the pan gently. Cook until the mixture is pulpy. Transfer the mixture into a food processor or a blender and smooth to a purée. Strain the purée into a strainer into another pot. Add the chicken stock and bring to a boil. Add the pasta and cook for 8-10 minutes until the pasta is al dente. Season with salt and pepper. Sprinkle with parsley and serve.
