
Piselli Freschi con Pancetta (Spring Peas with Pancetta)
Serves 4-6
Ingredients
4 lbs. English Peas
3 oz. Pancetta, Finely cubed
2 cloves Merchants Garlic, Crushed
1 cup Water
Salt & Pepper
Instructions
1. Shell the peas and set aside in a bowl. You should have about four cups. In a heavy pan, warm pancetta over medium heat. When it begins to sweat its fat, add the garlic and cook, stirring often until the garlic is golden and the pancetta is soft, but not browned. Stir in the peas, pour in water and cook over low heat until peas are tender but not mushy, about 10 minutes. Season with salt and pepper. Transfer to a serving bowl and serve warm.
