Pork (specifically prosciutto) is a staple of Italian cuisine, important in many regions of Italy for the various traditions and customs which accompany the production of prosciutto hams. Only the finest pigs are hand-picked for prosciutto production, and the legs must be dry-cured and aged for a minimum of ten months for the distinct flavor of the prosciutto to develop. The longer the prosciutto hams age, the sweeter and more intense the flavour of the ham becomes.

Prosciutto di San Daniele and Prosciutto di Parma are the two most recognized D.O.P. prosciutto products, produced with only specific pigs in a small region of Italy. With strict EU restrictions, all D.O.P. prosciutto products are branded with a Prosciutto di San Daniele or Prosciutto di Parma stamp, a signal to the consumer of the quality and authenticity of the meat product. Many legs of prosciutto do not pass the rigorous tests the prosciutto hams must pass to qualify as a D.O.P. ham. The specific methods of selecting, trimming, sorting, and eventually curing the hams determine the quality of each ham. Containing less salt and fat than traditional prosciutto, it is a healthier alternative and certainly something different.
