Gluten-Free Mac & Cheese

Serves 6-8

Ingredients

500 g cooked Anna’s Country Kitchen Gluten Free Elbows (Macaroni Pasta)
7 tablespoons unsalted butter
4 tablespoons amaranth our
2 cups milk
1 teaspoon salt
¼ teaspoon Merchant’s fresh ground pepper, or to taste

1 teaspoon Merchant’s onion powder
½ teaspoon Merchant’s garlic powder
2 cups freshly grated Italissima cheddar cheese
1 cup freshly grated Italissima Swiss cheese
1 cup freshly grated Italissima provolone cheese
1 cup freshly grated parmesan cheese (about 1 cup)

Instructions

1. Preheat oven to 350°

2. Put 2 tablespoons of unsalted butter in a 3-quart baking dish. Set aside.

3. Fill a large stockpot half full with water. Cover and bring water to boil over high heat.

4. Add one pound of gluten-free macaroni (elbow) noodles and a pinch of salt and return water to a boil.

5. Cook according to package directions, until al dente (beginning to soften but still somewhat rm to the bite).

6. While pasta is cooking shred cheeses and make the cheese sauce (Mornay).

7. Melt 4 tablespoons of butter in a medium saucepan over low heat. Whisk in 4 tablespoons of amaranth
and cook for 2 minutes, whisking constantly.

8. Slowly whisk in milk. Increase heat to medium and whisk until mixture thickens.

9. Remove from heat. Add salt, pepper, garlic powder, onion powder, 1 cup shredded cheddar cheese,

10. ½ cup Parmesan and all of the Swiss and Fontina cheese.

11. Stir until cheeses melt and mixture is smooth and creamy.

12. Put the baking dish with butter in the preheated oven and leave just until butter melts.

13. Remove and coat bottom and sides of the dish with butter using a pastry brush.

14. Drain, rinse and pat dry cooked pasta. Pour half of the pasta in the baking dish and cover with about

15. 1/2 of the cheese sauce. Distribute remaining pasta on top and evenly cover with remaining cheese sauce.

16. Lightly salt and pepper and bake for 45 minutes or until top is golden and bubbling.

17. Cool for at least 5 minutes before serving.
