Involtini di Bresaola, Ricotta, e Rucola
(Sliced Cured Beef stuffed with Ricotta)

Serves 6

Ingredients

24 slices Bresaola, Paper-thin
¾ cup Fresh Ricotta Cheese
¼ cup Mascarpone Cheese
3 tbsp. Chopped Arugula, Plus leaves for garnish
½ tsp. Minced Garlic
1 tsp. Grated Lemon Zest

Instructions

1. In a bowl, combine ricotta and mascarpone cheese, chopped arugula, garlic, and lemon zest. Mix well. Scatter arugula leaves on serving platter.

2. Lay a slice of bresaola on your work surface. Dip a spoon into cold water, then spoon 1 ½ tsp. of the cheese mixture and place on the center of the slice of bresaola. Starting at one end, roll the bresaola and place seam side down on the platter. Continue with the rest of bresaola and filling.

3. Refrigerate for half an hour before serving.
