Mascarpone Broccoli Soup

Serves 8

Ingredients

1 tub Italissima Mascarpone Cheese
3 tbsp Italissima Extra Virgin Olive Oil
¼ tbsp Cayenne Pepper
1 ½ cups Sliced Shallots (approx.. 6 large)

1 ½ lbs Broccoli Florets, cut into 1” pieces
6 cups Low salt chicken broth
3 tbsp Chopped fresh chives

Instructions

1. Heat oil in a large pot over medium heat
2. Add shallots and sauté for three minutes
3. Add broccoli and sauté for another one minute
4. Add broth and bring to a boil
5. Reduce heat to medium-low
6. Cover and simmer until vegetables are tender, for about 10 minutes
7. Cool slightly
8. Working in batches, transfer soup to blender and puree until smooth
9. Return to pot
10. Reserve ¼ cup mascarpone in a small bowl, cover and chill.
11. Whisk 1 ¼ cups mascarpone and cayenne pepper into soup.
12. Season with salt and serve.
