Roasted Pear Crumble
Serves 4
Ingredients
1 tub Italissima Mascarpone Cheese
2 Ripe pears, halved and cored
2 tbsp Italissima Extra Virgin Olive Oil
¼ cup Raw almonds or pecan halves, coarsely chopped
¼ cup Shelled pumpkin seelds
2 tbsp Light brown sugar
2 tbsp Old fashioned oats
1 tbsp Sesame seeds, preferably black
2 tsp Sugar
1 Pinch of Italissima kosher sea salt
Instructions
1. Preheat oven to 375F
2. Slice pears, and place cut side up on a small baking sheet
3. Drizzle olive oil on sliced bears, and roast on upper rack until soft (approx.. 20-30 mins)
4. Meanwhile, toss almonds, pumpkin seeds, brown sugar, oats, salt, and remaining 2 tbsp of oil on a small baking sheet
5. Toast on lower rack for approximately 10-12 minutes until golden
6. Remove from oven and add sesame seeds
7. Let cool.
8. Whisk mascarpone and sugar in a small bowl
9. Plate mascarpone with pears and nut-oat crumble
