Piquillo Peppers Stuffed with Goat Cheese

Serves 4-6

Ingredients

6 ounces Italissima Roasted Red Piquillo Peppers
(About six peppers)
6 ounces Italissima Goat Cheese, Softened
½ cup Fresh Spinach, Chopped

2 Garlic Cloves, Chopped
Salt & Pepper to taste
Preferisco Extra Virgin Olive Oil, for drizzling

Instructions

1. Mix Goat Cheese and fresh spinach in a bowl. Season with salt and pepper. Gently stuff the piquillo peppers with the goat cheese mixture. Be careful not to split the peppers. Lay the peppers in a baking dish and sprinkle garlic on each pepper. Drizzle with olive oil. Bake at 350˚F for 7-10 minutes.
